Basic Canon Angel Lore
Archangels
Archangels are the strongest class of angel, being looked at as Heaven's most fearsome wrath. They were the first Angels to be created, arguably making them God's first creations, possibly older than Leviathans. They were created in this order: Michael, Lucifer, Raphael, and Gabriel. Michael is the mightiest and the most loyal archangel, Lucifer is the most prideful and avaricious, Raphael was the most ruthless and imperious, while Gabriel was the most mischievous and deceptive. Seraphim
Seraphim are a higher class of angel, above normal angels such as Uriel and Joshua, but lower in status than archangels. They've worked under the command of the archangels for at least 6 millennia. The only known seraphs are Zachariah and Castiel. (source)
Angels
Angels are powerful, celestial beings created by God to serve as his attendants and messengers, but also as soldiers in His war against Lucifer and his demons. They are native to Heaven and are imbued with both holy white light as well as considerable power. Their true form is nothing less than that of holy righteous beings which are beautiful as well as hazardous, overwhelming, and terrifying all at the same time; ranging from two to six (maybe more) large feathered wings on their backs, four animalistic heads with halos of light around them, and heights as tall as skyscrapers. They represent a lower order of angels.There are dozens of them stationed on Earth, and Castiel states that they have been misunderstood by humans. They can manipulate the nature of human attraction, allowing them to make even the most opposite of humans fall in love. (source)
Rit Zien
Rit Zien are a special class of angel. In the battlefield, they act more as 'medics'. Their name is Enochian for "hands of mercy". They tended to the wounded--they healed those who could be healed, but for the mortally wounded or emotionally despondent, those who are past saving, the Rit Zien put them down. Because of this, there are those of the celestial ranks who seem to fear them. "They had this way of smiting that was so quick and so total that it rendered death virtually painless." (source)
Grigori
The Grigori were an elite class of powerful angels that were sent to Earth to protect humanity. They were some of the first angels to arrive on Earth, so they most likely kept a watch on humans while they were in the Garden of Eden. They eventually fell from their post, and started to feed on human souls. Most of them were wiped out, but a few of them still remain on Earth. (source)

Reapers are angels that serve Death. They assist in maintaining the Natural Order and used to be thought as completely neutral, aligned with neither Heaven nor Hell nor Purgatory, although now that it is shown that they are angels, it is assumed they work for Heaven. (source)
Nephilim
Nephilim are the result of sexual reproduction between a human and an occupied angel vessel, the latter giving the offspring angelic properties. Nephilim are only created if their angelic parent has his or her grace during conception, which seems to be the source of what makes a Nephilim. If an angel mates with a human without its grace, the resulting offspring will be completely human. Nephilim have glowing eyes like an angel, although their glow is somewhat dim and grayish in color as opposed to the bright white or bluish-white glow of regular angels. (source)
